Especially various horse meat dishes, such as sashimi, nigari (sushi), kamameshi (cooked and seasoned rice in an iron pot with horse meat), and horse offal have a good reputation. Sushi eaten in front of the sushi chefs at the counter is recommended too. Fish for sushi are from Ariake Sea and off the coast of Amakusa.
